This week’s meal idea is Chicken Broccoli Alfredo. Our daughter, Isabella made it for us for supper. From start to finish it should only take about 45 minutes.
Ingredients:
3 chicken breasts
1 white onion
1 bag of spinach
2 bags of broccoli
1 package of mozzarella pearls
4 oz. sun dried tomatoes
2 tbsp. Olive oil
2 tbsp. of butter
2 15oz. jars of Alfredo
Milk
Shredded mozzarella
Shredded colby jack cheese
Instructions:
Preheat oven to 350°.
Dice one white onion
Caramelize onions: melt 2 tbsp. of butter in a skillet, cook for 5 min on high and then 15 mins on low, remove from the pan and set it aside.
Cube three chicken breasts
Add 2 Tbsp. oil to your pan and cook the chicken
When the chicken reaches a temperature of 165° take out of the pan and set aside
Steam 2 bags of broccoli
Sauté 1 bag of spinach in a pan with the sun dried tomatoes
Combine all ingredients plus mozzarella pearls in a large bowl and mix
Pour into 9 x13 pan
Pour 2 jars of Alfredo with a tiny bit of milk over the rest of the ingredients in the pan
Sprinkle cheese on top and bake for 10 mins or until the cheese is melted.
