This week’s quick meal idea is Bacon Ranch Chicken. Our daughter, Abigail made it for us for supper, and the total time needed is just over 30 minutes.
 
Ingredients:
raw boneless chicken breasts
salt
pepper
Hidden Valley ranch seasoning
bacon
mozzarella cheese
chives
 
frozen green beans
olive oil
garlic salt
pepper
bacon
 
Instructions:
Preheat oven to 350°.
 
Cut raw boneless chicken breasts in quarters tenderize with meat mallet. Salt and pepper both sides and set aside.
 
Cut one pack of bacon into small pieces and fry it in a frying pan till desired crispiness, then set the bacon aside.
 
Sprinkle your desired amount ranch seasoning to raw chicken breasts on each side and add to the pan with a little bacon grease to prevent sticking. Cook over medium high heat for five minutes per side and put the cooked chicken in a 9 x 13 baking dish.
 
Sprinkle with ranch seasoning again, top with mozzarella cheese, bacon pieces and fresh chives then put the chicken in the oven on 350 for five minutes or until cheese is sufficiently melted.
 
For the green beans, open a bag of frozen green beans to your frying pan, add 2 tablespoons of olive oil, garlic salt, and pepper and cook for 10 minutes stirring frequently, then top with bacon crumbles.
